The Butcher Shop will sell many varieties of house made pork, beef, chicken and lamb sausages, portion cut steaks and chops, and ground meat from grass fed beef and pork. Using the whole animal to minimize waste, the shop will also make organic bone broths that will be sold hot and ready to drink or frozen to enjoy later. Offerings will include a line of prepared, ready-to-heat, organic cooked foods such meat pies, pot pies, meatloaf, meatballs, roasted turkey breast and whole roasted Belle and Evans chicken. Ready-to-cook meats include pre-rubbed steaks, chops and roasts in vacuum sealed bags. Handmade charcuterie will include items such as nitrate free hot dogs, smoked bacon, pates, galantines, and house cured hams.
During the lunch period, customers will be able to order fresh, made-to-order sandwiches using house made meats and local organic ingredients. Condiments, sauces, dressings, and mustards will be made from scratch in-house and will be available for sale in a small retail section of the shop. The bread for the sandwiches will be sourced from a local artisan baker and/or made in-house.
